Thanks to the quality of its coast, Carnac is one of the very first sites dedicated to shellfish farming since 1880. Today, more than 2500ha of parks are run by 30 producers of flat and hollow oysters. Every
one of us has seen someday some oyster shells during a walk along the
coast, and admired their shape, their colour or their reflection in the
sun. Some might have wished to learn more about the animal inside and
how to cook it. Shell
fishes are a treasure from the sea. They all taste differently according
to their geographical setting, their morphology, their colour, the stage
